VALUE-ADDED VITAMIN FORTIFIED BEVERAGE
The product is based on the liquid egg white and addresses to certain consumers groups, such as pregnant women, people with low levels in B-12 and folic acid, patients suffering from Mild Cognitive Impairment (MCI) and people that require a “brain boost”.
CLINIC TRIALS
These health benefits will be further verified by conducting a clinical trial in cooperation with a specialist neurologist. At the same time, with the use of advanced OMICS techniques the various pathways that get involved in the metabolism of the vitamin fortified product will be determined (transcriptomics and metabolomics). This will provide valuable information for the design of an even more specific food supplement in the future.
APPLICATIONS IN THE FOOD INDUSTRY
The second aim of EggWhiteBrain is to determine the optimum conditions of producing powder-form egg white, egg yolk or combination thereof. These powders are expected to have improved functional characteristics (solubility, foaming, gelling abilities) and find numerous applications in the food industry.
